Vegetarian burgers are very trendy nowadays. Almost every restaurant has one on the menu. But I find most creations disapointing, I must say. Not this one though! Cheesy, crispy and simple. And perfect for tailoring to your own tastes. Use spices in the patties, or use different toppings, whatever you like. And for the non-vegetarians: put some crispy bacon on top…..yum. Recipe in autumn theme.

Notes
You can season the patties with all kinds of spices, use your imagination. Mustardseeds, cumin, chillipepper are all very nice for example.
Ingredients
- 3 slices white bread
- 2 eggs
- 200 grams of white flour
- 250 grams ricotta
- 100 grams grated matured cheese
- 1 clove of garlic
- pepper and salt to taste
- olive oil for baking
- 4 hamburger buns
- stuff to garnish, like jalapeno peppers, lettuce, gherkins, onion slices
- 4 tablespoons of mayo or garlic sauce
Instructions
- blitz the bread and the garlic in a food processor or blender until very fine
- add everything up to pepper and salt and blend together
- coat your hands lightly in olive oil and form 4 patties of the mixture
- press flat
- bake in olive oil for 3 minutes, then flip and bake another 2 minutes
- turn heat down, place a lid on the pan and bake another 5 minutes
- meanwhile, toast the buns on the griddle or in the oven
- when the cheese patties are done, start assembling: put a bit of mayo or garlic sauce on each bun, put a pattie on top and then go crazy with your preferred toppings
- Enjoy!
