My favourite breakfast, and pretty healthy too!

This is my favourite breakfast. For Valentines day, I use a heartshaped wafflemaker, to surprise my love. The rest of the year, it is just regular shaped waffles, no less delicious.

Serving Size: 2 waffles

  • 50 grams of buckwheat flour
  • 200 grams of greek yoghurt, or for a vegan waffle coconut yoghurt
  • 2 eggs
  • 2 teaspoons of baking powder
  • 1 teaspoon of cinnamon
  • 100 grams of frozen red fruit, like blueberries and raspberries
  • 2 tablespoons of honey or maple syrup

  1. mix the yoghurt with the eggs
  2. add the flour, the baking powder and the cinnamon
  3. put the frozen fruit in a saucepan and add maple syrup or honey, heat gently until warm
  4. bake waffles of the mixture. For a romantic breakfast, use a heartshaped wafflemaker, like in the picture
  5. serve waffles with fruit mixture on top. You can add some powdered sugar, if you like. Nice, but less healthy…:)
