very easy side dish for a summery meal or a barbecue

Ingredients

  • 2 cans of corn
  • 200 grams of grated carrots
  • 10 grams of chopped mint
  • 10 grams of chopped chives
  • 20 grams pine nuts or sesame seeds, roasted
    Dressing:
  • 1 tbs honey
  • the juice of 1/2 lemon
  • 2 tbs olive oil

Instructions

    Dressing
  1. Whisk all the ingredients together into a nice dressing, taste and season with salt and pepper
  2. Add all the salad ingredients, except the nuts. Let it sit for a while, so the flavours can mingle
  3. Top with the roasted nuts
