Ingredients
- 2 cans of corn
- 200 grams of grated carrots
- 10 grams of chopped mint
- 10 grams of chopped chives
- 20 grams pine nuts or sesame seeds, roasted
Dressing:
- 1 tbs honey
- the juice of 1/2 lemon
- 2 tbs olive oil
Instructions
Dressing
- Whisk all the ingredients together into a nice dressing, taste and season with salt and pepper
- Add all the salad ingredients, except the nuts. Let it sit for a while, so the flavours can mingle
- Top with the roasted nuts
